I don't measure anything. Especially not recently. I've been so busy that when I get the chance to make something interesting it's mostly just me throwing a bunch of stuff in a bowl and really hoping it works out. So then when it does and I decide I want to post it, I have to sit down and try and remember what exactly I put in it. It's not the best system... But that's what happened with this Cheesy Rice and Broccoli.
It's a really simple recipe, with almost nothing in it but it came out amazing. The dressing is loosely based on this one from Budget Bytes here, but I played with the ratios and left out a few things to simplify it. The rest of the salad is really basic, just pasta, cheese, and sun dried tomatoes. It comes together super fast (hence the title, 10 Minute Pasta Salad!) and it's really refreshing. Makes me long for some summer weather to go with it!
Getting back on track some, fried rice is one of my favorite quick lunches to make. As long as there's leftover rice (which there almost always is in my fridge) and a handful of good veggies, it can be made whipped up in less than 10 minutes. Plus it's super customizable, just make it with whatever veggies you have on hand (I'll touch on this more below) and your favorite combination of sauces and it can come out different and delicious every time!
My roommate and I love potatoes. We'd eat them 7 days a week if we had the time. We make them all different kinds of ways, in the frying pan, in the oven, homefries, french fries, baked potatoes, potato skins, mashed potatoes... You name it, we've probably done it.
Quick and easy breakfast cookies made from instant oatmeal packets and delicious fresh raspberries. Mixes up in under 2 minutes!
It's got all the elements of good mac and cheese - breadcrumbs, bachamel sauce, yummy add-ins - but with a twist. The bachamel sauce is made without milk, the add-ins are corn and beans in lieu of the more common veggies, and the cheese is mostly mozzarella. I went into it with little expectations and it came out amazing! Trust me, it sounds weird but it's sooo good!
So for my first post after being back at school for over a month of the busiest semester ever is one of my favorite ways to make overnight oats. I give you, Strawberry Overnight Oats with Chia Seeds!
The other day my dad was making a tofu scramble for dinner and it smelled soooo good, but I had plans to go out and didn’t want to spoil my appetite so I couldn’t eat any and it was killing me. Lucky for me he only used half a block of tofu so when I …
Omg it’s been like 3 weeks since I put a post up!! It’s been a crazy 3 weeks. First it was finals (yuck) and then next thing I knew it was Christmas! I got soooo much kitchen stuff for Christmas it was awesome, I’m so excited to use it all! Things calmed down a day …
So if you saw my last post, you already know that I’m just about to start finals and school is absolutely crazy right now. You also know the only reason I’m still alive is because I’ve been living on these 2 Minute Burritos. I don’t know how I survived before without them, I’ve been eating …
