I don't measure anything. Especially not recently. I've been so busy that when I get the chance to make something interesting it's mostly just me throwing a bunch of stuff in a bowl and really hoping it works out. So then when it does and I decide I want to post it, I have to sit down and try and remember what exactly I put in it. It's not the best system... But that's what happened with this Cheesy Rice and Broccoli.
It's a really simple recipe, with almost nothing in it but it came out amazing. The dressing is loosely based on this one from Budget Bytes here, but I played with the ratios and left out a few things to simplify it. The rest of the salad is really basic, just pasta, cheese, and sun dried tomatoes. It comes together super fast (hence the title, 10 Minute Pasta Salad!) and it's really refreshing. Makes me long for some summer weather to go with it!

Getting back on track some, fried rice is one of my favorite quick lunches to make. As long as there's leftover rice (which there almost always is in my fridge) and a handful of good veggies, it can be made whipped up in less than 10 minutes. Plus it's super customizable, just make it with whatever veggies you have on hand (I'll touch on this more below) and your favorite combination of sauces and it can come out different and delicious every time!

It's got all the elements of good mac and cheese - breadcrumbs, bachamel sauce, yummy add-ins - but with a twist. The bachamel sauce is made without milk, the add-ins are corn and beans in lieu of the more common veggies, and the cheese is mostly mozzarella. I went into it with little expectations and it came out amazing! Trust me, it sounds weird but it's sooo good!
